Potato Soup with Beans and Greens

1/4 tsp salt
1 tbsp italian herbs, rosemary or thyme
3 cloves garlic, chopped (optional)
1/2 cup onion, chopped
3 cups potatoes, chopped
1 can (15 oz) collard greens or mixed greens, drained
1 can (15 oz) white beans, drained and rinsed
1/4 cup parmesan cheese, shredded (optional)
1 tbsp lemon juice or vinegar
4 cups low sodium chicken or vegetable broth
2 cups water
2 tsp oil
INSTRUCTIONS
- Heat oil in a soup pot over medium-high heat.
- Add onion and garlic, if using. Cook for 2-3 minutes.
- Add herbs and salt. Stir to mix. Cook for 1 minute.
- Add broth, water, and potatoes. Bring to a boil.
- Reduce heat to a medium-low. Cover pot with a lid. Cook for 15 minutes.
- Add greens and beans. Cook for 5 minutes.
- Add lemon juice or vinegar, if using.
- To serve, top with shredded parmesan cheese.
