Ingredients

  • 1/4 tsp salt

  • 1 tbsp italian herbs, rosemary or thyme

  • 3 cloves garlic, chopped (optional)

  • 1/2 cup onion, chopped

  • 3 cups potatoes, chopped

  • 1 can (15 oz) collard greens or mixed greens, drained

  • 1 can (15 oz) white beans, drained and rinsed

  • 1/4 cup parmesan cheese, shredded (optional)

  • 1 tbsp lemon juice or vinegar

  • 4 cups low sodium chicken or vegetable broth

  • 2 cups water

  • 2 tsp oil

INSTRUCTIONS

  • Heat oil in a soup pot over medium-high heat.
  • Add onion and garlic, if using. Cook for 2-3 minutes.
  • Add herbs and salt. Stir to mix. Cook for 1 minute. 
  • Add broth, water, and potatoes. Bring to a boil.
  • Reduce heat to a medium-low. Cover pot with a lid. Cook for 15 minutes.
  • Add greens and beans. Cook for 5 minutes.
  • Add lemon juice or vinegar, if using.
  • To serve, top with shredded parmesan cheese.
