    Ingredients

    • 1 tsp oil

    • 1 cup onion, chopped

    • 3 cloves garlic, chopped

    • 6 cups kale or collard greens, chopped

    • 1 can (15 oz) white beans, drained and rinsed

    • 1 cup low-sodium chicken broth

    • 1 tbsp lemon juice or apple cider vinegar 

    • 1/2 tsp black pepper or red pepper flakes

    • 1/4 cup parmesan cheese (optional)

    INSTRUCTIONS

    • Heat oil in a large pot over medium heat. 
    • Add onion and garlic. Cook for 3 minutes.
    • Add half of the greens. Cook for 2 minutes.
    • Add the rest of the greens, white beans, and chicken broth. Cover pot with a lid. Cook for 15 minutes.
    • Before serving, add lemon juice or apple cider vinegar. Top with pepper and parmesan cheese, if using.
