1 tsp oil
1/2 cup onion, chopped
3 cups canned or frozen mixed vegetables
3 eggs, beaten
1 tsp 2 cups cooked brown or white rice
2 tbsp reduced-sodium soy sauce
1/2 tsp garlic powder
INSTRUCTIONS
- Heat oil in a large skillet or frying pan over medium-high heat.
- Add onion and mixed vegetables. Stir to mix.
- Cook for 6-7 minutes. Stir while cooking, so vegetables do not burn.
- Push vegetables to one side of the pan.
- Add eggs to the other side of the pan. Scramble. Cook for 1-2 minutes.
- Add rice, soy sauce and garlic powder. Stir to mix. Cook for 1-2 minutes.
