    Ingredients

    • 2 tsp garlic powder

    • 1 tbsp cumin (optional)

    • 1/4 tsp salt

    • 1/2 cup onion, chopped

    • 1 bell pepper, chopped

    • 3 cups sweet potatoes, peeled and chopped

    • 1 can (15 oz) black beans, drained and rinsed

    • 1 tsp oil

    INSTRUCTIONS

    • Heat oil in a large skillet or frying pan over medium heat.
    • Add sweet potatoes, bell pepper, onion, and seasonings. Stir to mix.
    • Cook for 15 minutes, stirring occasionally.
    • Add black beans. Stir to mix. Cook for 5 minutes.
