1 bell pepper, chopped
3 cups sweet potatoes, peeled and chopped
1 can (15 oz) black beans, drained and rinsed
1 tsp oil
INSTRUCTIONS
- Heat oil in a large skillet or frying pan over medium heat.
- Add sweet potatoes, bell pepper, onion, and seasonings. Stir to mix.
- Cook for 15 minutes, stirring occasionally.
- Add black beans. Stir to mix. Cook for 5 minutes.
