Ingredients

  • 1/2 Fresh Pineapple

  • 1 15 oz can Black Beans, drained & rinsed

  • 1 14-15 oz can Diced tomatoes with juice

  • 1 Small Red Onion (diced)

  • 1 Jalapeno

  • 2 Tbsp Lime Juice

  • 1/3 Cup Fresh Cilantro, chopped

  • Drizzle Olive Oil

  • A pinch of Salt & Pepper

INSTRUCTIONS

  • Grill or saute pineapple until browned. Let cool and cut into small chunks.
  • Add all ingredients to a bowl with cut pineapple.
  • Refrigerate for at least 30 minutes.
  • Serve with tortilla chips or tacos. Use as a topping for chicken, pork or whatever way you like!
