Pineapple Salsa

1/2 Fresh Pineapple
1 15 oz can Black Beans, drained & rinsed
1 14-15 oz can Diced tomatoes with juice
1 Small Red Onion (diced)
1 Jalapeno
2 Tbsp Lime Juice
1/3 Cup Fresh Cilantro, chopped
Drizzle Olive Oil
A pinch of Salt & Pepper
INSTRUCTIONS
- Grill or saute pineapple until browned. Let cool and cut into small chunks.
- Add all ingredients to a bowl with cut pineapple.
- Refrigerate for at least 30 minutes.
- Serve with tortilla chips or tacos. Use as a topping for chicken, pork or whatever way you like!
