2 cups rolled or quick oats
1/2 cup raisins
2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
2 bananas, peeled
1 cup low-fat milk
1 egg
1 tsp vanilla
INSTRUCTIONS
- Preheat oven to 350°.
- Add oats, raisins, cinnamon, baking powder, and salt to a bowl. Stir to mix.
- In a separate bowl, mash the banana with a fork. Add milk and egg. Add vanilla, if using. Stir to mix.
- Add wet ingredients to the dry ingredients. Stir to mix.
- Pour oatmeal mixture into an 8-inch by 8-inch baking dish or bread pan. Bake for 25-30 minutes.
