    Ingredients

    • 2 cups rolled or quick oats

    • 1/2 cup raisins

    • 2 tsp cinnamon

    • 1/2 tsp baking powder

    • 1/4 tsp salt

    • 2 bananas, peeled 

    • 1 cup low-fat milk

    • 1 egg

    • 1 tsp vanilla

    INSTRUCTIONS

    • Preheat oven to 350°.
    • Add oats, raisins, cinnamon, baking powder, and salt to a bowl. Stir to mix.
    • In a separate bowl, mash the banana with a fork. Add milk and egg. Add vanilla, if using. Stir to mix.
    • Add wet ingredients to the dry ingredients. Stir to mix.
    • Pour oatmeal mixture into an 8-inch by 8-inch baking dish or bread pan. Bake for 25-30 minutes.
