Tuna or Salmon Burgers

1/4 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
2 eggs
1/2 cup breadcrumbs
1 can (10-12 oz) tuna or salmon, drained
2 tbsp dijon or yellow mustard
INSTRUCTIONS
- Preheat oven to 400°.
- Add drained fish to a large mixing bowl. Use a fork to break up the fish into small pieces.
- Add onion, bell pepper, and breadcrumbs. Stir to mix.
- Add eggs, mustard, and seasoning to a small bowl. Stir to mix.
- Add egg mixture to fish. Stir to mix.
- Use ½ cup measuring cup to scoop burger mixture and form into patties on a baking sheet.
- Bake for 10-15 minutes.
- Remove from oven. Carefully flip burgers.
- Return to oven, bake for 5 minutes.
