    Ingredients

    • 2 tsp oil

    • 1 cup potato, shredded

    • 1 cup carrot, shredded

    • 1 cup beet, shredded

    • 1 cup sweet potato, shredded

    • 1 onion, thinly sliced

    • 1/4 tsp salt

    • 1/4 tsp black pepper

    INSTRUCTIONS

    • Heat oil in a large skillet over medium heat.
    • Add potato, carrot, beet, sweet potato, and onion to a large bowl. Stir to mix vegetables.
    • Add vegetables to the skillet. Spread vegetables in an even layer to cover the bottom of the skillet. Cook for 5 minutes.
    • Season with salt and black pepper.
    • Use a spatula to flip the vegetables so they do not burn. Cook for 5 minutes.
