2 tsp oil
1 cup potato, shredded
1 cup carrot, shredded
1 cup beet, shredded
1 cup sweet potato, shredded
1 onion, thinly sliced
1/4 tsp salt
1/4 tsp black pepper
INSTRUCTIONS
- Heat oil in a large skillet over medium heat.
- Add potato, carrot, beet, sweet potato, and onion to a large bowl. Stir to mix vegetables.
- Add vegetables to the skillet. Spread vegetables in an even layer to cover the bottom of the skillet. Cook for 5 minutes.
- Season with salt and black pepper.
- Use a spatula to flip the vegetables so they do not burn. Cook for 5 minutes.
