Ingredients

  • 1 1/2 cups pumpkin seeds

  • 1 tsp oil

  • 1/4 tsp salt

INSTRUCTIONS

  • Preheat oven to 300˚
  • Cut a lid out of the top of the pumpkin. Scoop seeds out of the pumpkin.
  • Add seeds to a colander. Rinse under cool running water to remove pumpkin flesh from seeds.
  • Dump seeds onto a clean kitchen towel or paper towel. Pat seeds dry.
  • Add dry seeds to a bowl. Add oil and salt. Stir to coat.
  • Spread seeds in an even layer on a baking sheet.
  • Roast until seeds are beginning to brown, about 25 minutes.
