Peanut Vegetable Stir Fry

1/2 tsp garlic powder
1 tbsp peanut butter
1 cup carrots, chopped
1 cup onion, chopped
1 cup bell pepper, chopped
1 cup broccoli, chopped
2 tbsp 100% apple juice
2 tbsp low sodium soy sauce
2 tsp oil
INSTRUCTIONS
- Add soy sauce, juice, peanut butter, and garlic powder to a small bowl. Stir to mix.
- Chop pepper, broccoli, carrot and onion.
- Heat oil in a skillet over medium-high heat.
- Add carrot and onion. Cook for 3 minutes.
- Add bell peppers and broccoli. Cook for 7 minutes. Stir vegetables as they cook, so they do not burn.
- Add stir-fry sauce. Stir to coat vegetables. Serve with ½ cup brown or white rice.
