Ingredients

  • 1/2 tsp garlic powder

  • 1 tbsp peanut butter

  • 1 cup carrots, chopped

  • 1 cup onion, chopped

  • 1 cup bell pepper, chopped

  • 1 cup broccoli, chopped

  • 2 tbsp 100% apple juice

  • 2 tbsp low sodium soy sauce

  • 2 tsp oil

INSTRUCTIONS

  • Add soy sauce, juice, peanut butter, and garlic powder to a small bowl. Stir to mix. 
  • Chop pepper, broccoli, carrot and onion. 
  • Heat oil in a skillet over medium-high heat. 
  • Add carrot and onion. Cook for 3 minutes.
  • Add bell peppers and broccoli. Cook for 7 minutes. Stir vegetables as they cook, so they do not burn. 
  • Add stir-fry sauce. Stir to coat vegetables. Serve with ½ cup brown or white rice.
